In The Kitchen

The weather in my neck of the woods has gone from sunny and 90's to 50's and raining in what seems like a matter of just days.  I have put away the shorts and tank tops for now and hauled out fuzzy sweats.  This weather change has got me thinking about fall decorations and comfort food...and chocolate...and cookie dough!


The other cold and rainy night I had a couple of rather bored and grumpy little boys on my hands.  So I decided it was time to make them a yummy treat and have them help! (OK let's face it, it was more like let's make mommy a treat!)  So who doesn't LOVE cookie dough?


Chocolate Chip Cookie Dough Truffles
  • 2 1/2 cups Flour
  • 1 1/2 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 cup Butter @ room temp.
  • 3/4 cups Sugar
  • 3/4 cups Packed Brown Sugar
  • 1 teaspoon vanilla
  • 1/3 cups Milk
  • 1 cup Mini Semi-sweet Chocolate Chips*
  • 14 oz Chocolate Chips or Candy Coating

Beat butter and sugars with mixer until fluffy.  Add milk and vanilla.  Stir in flour, baking soda and salt, mix until combined.  Mix in chocolate chips *(I added half mini chip and half peanut butter chips because thats how I roll!)


Chill dough for a bit.  


Next I used a 1" scooper to form the dough balls and placed them on paper lined baking sheets.  If you need to chill them again you can.


I used a double broiler to melt the chocolate chips and added about 2 tablespoons shortening to make the chocolate smooth.  Next I used a fork to dip the balls into the chocolate and tapped off any excess on the side.  I put them back on the baking sheets and put them in the freezer for a bit to set up.  Once chilled I put them in a zip lock bag and put them back in the freezer.  These truffles are a quick and yummy treat and even better straight out of the freezer!  


I think I will make the dough again and throw some chunks of it in the next time I make a batch of homemade vanilla ice cream!
